Greek Watermelon Salad

Market Ingredients:
2 cups watermelon, de-seeded and cubed - @vrdnt.farm
3–4 large heirloom tomatoes, chopped - @vrdnt.farm
1 medium cucumber, sliced into quarter rounds - @bernhardtsfarm
2–3 red bell peppers, diced - @southernstarfarms_tx
1 small red onion, thinly sliced - @bouldinfoodforest
1/3 cup crumbled red pepper feta - @floreli.sunflower
1 cup fresh basil leaves, whole or torn - @bouldinfoodforest
Dressing Ingredients:
2 tbsp balsamic vinegar
2 1/2 tbsp olive oil
1 tbsp honey
1 tsp garlic powder
1 tsp salt (or to taste)
Directions:
In a large serving bowl, combine the watermelon, tomatoes, cucumber, bell peppers, and red onion.
In a separate small bowl, whisk together the balsamic vinegar, olive oil, honey, garlic powder, and salt until well combined.
Drizzle the dressing over the salad and gently toss to coat the ingredients evenly.
Add the fresh basil leaves and fold them into the salad.
Top with crumbled red pepper feta. Garnish with a few extra basil leaves if you have more on hand.
Serve immediately, fresh and chilled.
