Chicken Salad Stuffed Peppers

Market Ingredients: 

  • 6-8 bell peppers, cut in half lengthways - @southernstarfarms_tx

  • 1 pint smoked chicken salad - @three_six_general

  • 1/2 cup chopped parsley - @vermillion_farms

Dressing Ingredients:

  • 2 tbsp balsamic vinegar

  • 2 1/2 tbsp olive oil

  • 1 tbsp honey

  • 1 tsp garlic powder

  • 1 tsp salt (or to taste)

Directions:

  1. Cut the bell peppers in half lengthwise then place in a mixing bowl.

  2. Drizzle the peppers with olive oil and season lightly with salt and pepper. Toss gently to coat.

  3. Heat a medium-sized shallow pan over low heat. Once warm, place the peppers cut side down in the pan arranged in a single layer. Sear for 1–2 minutes until lightly browned. Flip to cook the other side for another minute.

  4. Transfer the cooked peppers to a paper towel-lined plate and allow to cool before handling.

  5. Fill each pepper half with about 2–3 tablespoons of smoked chicken salad. Top with a sprinkle of chopped parsley and a pinch of radish microgreens.

  6. Arrange the stuffed peppers on a serving tray and serve immediately!
