Zucchini Plum Salad

Market Ingredients: 

  • 2 cups zucchini, washed and diced - Bernhardt’s Farm

  • 1 cup plums, diced - Lightsey Farms

  • 1 tablespoon fresh thyme, chopped

Other Ingredients:

  • ½ teaspoon smoked salt (or to taste)

  • Zest and juice of 1 lemon

  • Juice of 1 lime

Directions:

  1. Dice zucchini and plums, set aside. Chop thyme.

  2. In a large mixing bowl, combine the diced zucchini, diced plums, and chopped thyme.

  3. Add the smoked salt, lemon zest, lemon juice, and lime juice.

  4. Toss everything together until well combined.

  5. Let the salad sit for about 10 minutes to allow the flavors to meld. Put in the fridge to chill if serving later.

  6. Give it one last toss and serve!
