Cinco de Mayo Heirloom Salsa!

Featured Ingredients:
3-4 medium mixed tomatoes (featuring purple Cherokee & yellow heirlooms) - @b5farm
1 medium cucumber, de-seeded - @bernhardtsfarm
2-3 purple bell pepper - @emadi_acres_farm
1 Serrano pepper, finely sliced - @emadi_acres_farm
1 bunch cilantro, finely chopped - @simple_promise_farms
1/4 cup red onion, finely chopped - @bernhardtsfarm
2 tbsp muscadine grape vinegar - @luminariaacres
Sun-dried tomato crackers - @the_sourdough_project, for serving
Other Ingredients:
2 tbps minced garlic
Juice of 1 lime
2 tsp cumin
1 tsp chipotle pepper
Salt and pepper to taste
Directions:
Dice tomatoes, cucumber, bell peppers, and red onion into similar-sized cubes for a consistent texture. Add to a large mixing bowl.
Finely slice the serrano pepper (remove seeds for less heat) and chop the cilantro. Toss them into the bowl.
Add the minced garlic, lime juice, muscadine grape vinegar, cumin, chipotle powder, salt, and pepper. Stir everything well to combine.
(Optional but encouraged): Cover and let sit in the fridge for 30 minutes to let flavors meld.
Serve salsa generously onto sun-dried tomato crackers or enjoy with chips, tacos, or grilled veggies.
