Cucumber Cabbage Ginger Slaw

Market Ingredients:
1/2 cup red cabbage kraut (@bernhardtsfarm)
1 small knob fresh ginger, minced (@emadi_acres_farm)
1 small bunch cilantro, de-stemmed (@emadi_acres_farm)
1 Japanese cucumber (@b5farm)
1 head romaine lettuce (@vermillionfarms_)
DRESSING Ingredients:
2 tbsp kraut brine (from the red cabbage kraut)
1 tbsp minced fresh ginger
1/2 tbsp soy sauce
1/2 tbsp local honey (@roundrockhoney)
1 tsp toasted sesame oil
Juice of 1/2 lime
Directions:
Slice the cucumber into long spears or shave into ribbons using a veggie peeler. Chop the romaine into thick ribbons.
In a large bowl, combine the chopped romaine, cucumber, 1/2 cup drained red cabbage kraut, and de-stemmed cilantro. Toss gently.
Make the dressing: In a small bowl, whisk together the kraut brine, minced ginger, soy sauce, honey, sesame oil, and lime juice. Taste and adjust seasoning if needed.
Pour the dressing over the slaw mixture and toss to coat evenly.
Finish with a sprinkle of sesame seeds and a few extra cilantro leaves. Enjoy!
