Chili-spiced cucumber salad

Market Ingredients: 

  • 4 cucumbers, halved and thinly sliced (@simple_promise_farms)

  • 1–2 Fresno peppers (@bernhardtsfarm), finely diced

  • 2 green onions, thinly sliced (@bernhardtsfarm)

Chili-Oil Dressing Ingredients:

  • 1/2 tbsp chili oil (@SherpaSnacks)

  • 1 1/2 tbsp rice vinegar

  • 1 tbsp honey

  • 2 tsp soy sauce

  • 2 tsp toasted sesame oil

  • 1 lime, juiced

  • 2 tbsp sesame seeds, plus more for garnish

Directions:

  1. Add the sliced cucumbers, green onion, and peppers to a large bowl.

  2. In a separate bowl, whisk together all the dressing ingredients. Taste and adjust for spice and acidity as needed.

  3. Pour the dressing over the salad, toss to combine, and garnish with extra sesame seeds. Serve immediately or chilled.
