Chickpea & Pickled Beet on Pita

Market Ingredients:
½ cup pickled beets, cubed – @munkebofarms
2–3 Armenian cucumbers, diced – @simplepromisefarms
1 container marinated chickpeas – @yallaTtizers
1 small red onion, thinly sliced – @southernstar_tx
Other Ingredients:
3–4 pitas or wraps of choice
Fresh herbs (such as parsley, dill, or mint)
Fresh lemon juice
Directions:
Cut the pita or wraps into halves or quarters, depending on how you plan to serve them.
In a bowl, combine the marinated chickpeas, diced cucumbers, and thinly sliced red onion.
Spoon the mixture into the pita pockets or onto the wraps.
Top with cubed pickled beets.
Finish with a sprinkle of fresh herbs and a squeeze of lemon juice, if desired.
