Chickpea & Pickled Beet on Pita

Market Ingredients: 

  • ½ cup pickled beets, cubed – @munkebofarms

  • 2–3 Armenian cucumbers, diced – @simplepromisefarms

  • 1 container marinated chickpeas – @yallaTtizers

  • 1 small red onion, thinly sliced – @southernstar_tx

Other Ingredients:

  • 3–4 pitas or wraps of choice

  • Fresh herbs (such as parsley, dill, or mint)

  • Fresh lemon juice

Directions:

  1. Cut the pita or wraps into halves or quarters, depending on how you plan to serve them.

  2. In a bowl, combine the marinated chickpeas, diced cucumbers, and thinly sliced red onion.

  3. Spoon the mixture into the pita pockets or onto the wraps.

  4. Top with cubed pickled beets.

  5. Finish with a sprinkle of fresh herbs and a squeeze of lemon juice, if desired.

  6. Enjoy!
